Mexican Tomatillo Chicken Soup 

Prep Time: 5 Minutes Cook Time: 30 minutes

  • 1 Bottle Salty Iguana Green Bloody Mary Mix (Original Flavor)

  • 2 Cups Vegetable Broth

  • 1 Pint Heavy Cream

  • 4 Tablespoons Unsalted Butter

  • 1 can Hominy (29 ounces, drained)

  • 1 bag Frozen Corn (10 ounces)

  • Rotisserie Chicken Meat


Pour a bottle of Salty Iguana Green Bloody Mary Mix and vegetable broth into a medium sized cooking pan, bring contents to a boil and then reduce heat to medium for about 5 minutes. Add heavy cream and butter, cooking to reduce liquid and lightly thicken contents. Add hominy (drained), frozen corn, and rotisserie chicken. Reduce heat to low and simmer while stirring frequently. Serve hot, garnished with dill and a dollop of sour cream.
